Ingredients
  • 2 Tbs Olive Oil
  • 1 small onion finely diced
  • 1 Tbs tomatopurée
  • 2 cups hot water
  • 2 celery stalks diced
  • 2 carrots diced
  • 2 tbs red lentils
  • 2 Tbs chicken stock
  • 600g Chicken or Beef Tortellini
  • Parmesan cheese (optional)
  • Crusty bread
  • Additional hot water required

Tortellini Soup

Method
  • Add the oil to the pan.
  • Finely dice the onions and add to your pan.
  • Turn on the heat and gently sauté the onions until semi-transparent remembering to stir occasionally.
  • When the onions are transparent add the tomato paste.
  • Allow to cook for a few minutes and stir regularly.
  • Add the water, turn up the heat and bring to the boil.
  • Simmer for a few minutes.
  • Add the carrots, celery & lentils and bring back to the boil.
  • Add the chicken stock and fill the pan with boiling water and give it a stir.
  • Lower the heat and place the lid on the pan, leave the lid slightly ajar with a spoon.
  • Allow the soup to simmer for an hour and check regularly.
  • Carefully add the chicken or beef tortellini to the soup and give it a stir.
  • Top up with boiling water and turn up the heat.
  • Cook till the tortellini is al dente.
  • Taste to make sure it does not require seasoning.
  • When the soup is ready, ladle into a bowl.
  • Sprinkle with parmesan cheese and crusty bread. Enjoy!!
