Ingredients
- 2 Tbs Olive Oil
- 1 small onion finely diced
- 1 Tbs tomatopurée
- 2 cups hot water
- 2 celery stalks diced
- 2 carrots diced
- 2 tbs red lentils
- 2 Tbs chicken stock
- 600g Chicken or Beef Tortellini
- Parmesan cheese (optional)
- Crusty bread
- Additional hot water required
Tortellini Soup
Method
- Add the oil to the pan.
- Finely dice the onions and add to your pan.
- Turn on the heat and gently sauté the onions until semi-transparent remembering to stir occasionally.
- When the onions are transparent add the tomato paste.
- Allow to cook for a few minutes and stir regularly.
- Add the water, turn up the heat and bring to the boil.
- Simmer for a few minutes.
- Add the carrots, celery & lentils and bring back to the boil.
- Add the chicken stock and fill the pan with boiling water and give it a stir.
- Lower the heat and place the lid on the pan, leave the lid slightly ajar with a spoon.
- Allow the soup to simmer for an hour and check regularly.
- Carefully add the chicken or beef tortellini to the soup and give it a stir.
- Top up with boiling water and turn up the heat.
- Cook till the tortellini is al dente.
- Taste to make sure it does not require seasoning.
- When the soup is ready, ladle into a bowl.
- Sprinkle with parmesan cheese and crusty bread. Enjoy!!
